So this What I ate Wednesday (WIAW) seems to be a very popular topic amongst bloggers. So I figured why not jump on the bandwagon! So today was a leftover day but I’ll share with you what I made for dinner last night and then ate for lunch today.
Super yummy Lemon Greek Chicken and Parmesan Brussel Sprouts.
I discovered this recipe months ago and have been tweaking it ever since. So feel free to try it out and make your own changes. Feel free to use the original recipe. The only thing I think makes it better is to use the honey flavored greek yogurt instead of plain. I also use chili powder instead of cumin.

To pair with it is nummy Parmesan Brussel Sprouts! This is an Emeril recipe!! Cut steams off sprouts. Cut sprouts in half. Put in bowl with salt, pepper, garlic, and olive oil. Roast Sprouts in 350 degree oven until brown and roasted. Put back in original bowl. Add move olive oil and shredded parm! Enjoy! And even my husband who simply tolerates greens like these!!
